Description
A hearty corned beef casserole made with rye bread, swiss cheese, and thousand island dressing, baked to perfection.

- 8 cups rye bread (cubed)
- ¼ cup butter (melted)
- 8 ounces corned beef (diced (about 2 cups), divided)
- ¾ cup thousand island dressing (divided)
- 1 cup sauerkraut (well drained)
- 2 cups shredded swiss cheese (divided)
- ½ cup pickles (chopped)
Instructions
- Preheat oven to 400℉. Grease a 9×13-inch baking dish.
- In a large bowl toss bread cubes with melted butter. Spread half of the cubes into the baking dish.
- Layer the following: 4 ounces corned beef (about 1 cup), ½ cup thousand island dressing, sauerkraut, 1 cup swiss cheese, remaining corned beef. Top with the remaining bread cubes.
- Cover with foil and bake for 25 minutes.
- Uncover and spread remaining cheese over the top. Bake an additional 10 minutes or until cheese is melted and casserole is heated through.
- Top with remaining dressing and chopped pickles when serving.
Notes
- For extra flavor, consider adding some herbs or spices to the layers.
- This casserole can be made a day ahead and simply baked when ready to serve.
