Description

A hearty corned beef casserole made with rye bread, swiss cheese, and thousand island dressing, baked to perfection.


Ingredients

  • 8 cups rye bread (cubed)
  • ¼ cup butter (melted)
  • 8 ounces corned beef (diced (about 2 cups), divided)
  • ¾ cup thousand island dressing (divided)
  • 1 cup sauerkraut (well drained)
  • 2 cups shredded swiss cheese (divided)
  • ½ cup pickles (chopped)

Instructions

  1. Preheat oven to 400℉. Grease a 9×13-inch baking dish.
  2. In a large bowl toss bread cubes with melted butter. Spread half of the cubes into the baking dish.
  3. Layer the following: 4 ounces corned beef (about 1 cup), ½ cup thousand island dressing, sauerkraut, 1 cup swiss cheese, remaining corned beef. Top with the remaining bread cubes.
  4. Cover with foil and bake for 25 minutes.
  5. Uncover and spread remaining cheese over the top. Bake an additional 10 minutes or until cheese is melted and casserole is heated through.
  6. Top with remaining dressing and chopped pickles when serving.

Notes

  • For extra flavor, consider adding some herbs or spices to the layers.
  • This casserole can be made a day ahead and simply baked when ready to serve.
