Description

Delicious and healthy muffins made with ripe bananas, oats, and chocolate chips.


Ingredients

Scale
  • 1 cup Mashed Banana
  • 1/2 cup Peanut Butter
  • 1/2 cup Unsweetened Applesauce
  • 2 tbsp Maple Syrup
  • 2/3 cup Almond Milk
  • 1 tsp Vanilla
  • 2 cups Old Fashioned Rolled Oats
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/3 cup Chocolate Chips

Instructions

  1. Preheat the oven to 350 degrees. Line a muffin pan with muffin liners and set aside.
  2. In a medium bowl, combine mashed banana, peanut butter, applesauce, maple syrup, almond milk, and vanilla.
  3. Stir in old fashioned rolled oats, baking powder, and cinnamon. Mix well.
  4. Add in chocolate chips.
  5. Divide batter evenly between muffin cups. Sprinkle a few extra chocolate chips on top of batter.
  6. Bake for 20 minutes.
  7. Optional: Drizzle with melted peanut butter before serving.

  • Store leftover muffins in an airtight container for up to 3 days.
