This delicious Pistachio Crusted Chicken is tender, juicy and coated with a crunchy pistachio crust, served with a creamy yogurt sauce.

- 4 boneless, skinless chicken breasts (about 1 lbs)
- 1 cup unsalted roasted pistachios
- 2 tbsp fresh parsley or cilantro
- 1 tsp garlic powder
- 3 tbsp olive oil
- 1 cup plain Greek yogurt
- 2 tbsp lemon juice (freshly squeezed)
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the chicken breasts dry and drizzle with olive oil, rubbing it in evenly.
- In a food processor, blend pistachios, garlic powder, and parsley until finely chopped.
- Coat each chicken breast generously with the pistachio mixture.
- Bake for 25-30 minutes until golden brown and the internal temperature reaches 165°F (75°C).
- Meanwhile, mix Greek yogurt, lemon juice, honey, salt, and pepper in a bowl until smooth.
- Allow the chicken to rest for five minutes before serving with the yogurt sauce.

- You can substitute pistachios with walnuts or almonds if preferred.
