Ingredients

  • 1 cup granulated sugar
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1 cup heavy whipping cream
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper and draw an 8-inch circle as a guide.
  2. In a clean mixing bowl, combine egg whites and vinegar. Whip on medium speed until soft peaks form. Gradually add sugar one tablespoon at a time until stiff peaks form and the mixture is glossy.
  3. Gently fold in cornstarch and vanilla extract.
  4. Spoon the meringue onto the prepared baking sheet within the circle. Create swirls or peaks using a spatula.
  5. Bake for about 1 hour until dry to touch but soft inside. Turn off the oven and let it cool completely inside.
  6. Once cooled, transfer to a platter. Spread whipped cream over the top and pile on fresh berries.
