Description

A delicious and easy way to enjoy roasted vegetables in foil packets.


Ingredients

Scale
  • 2 large potatoes, diced (Make sure to wash before dicing.)
  • 1 medium bell pepper, diced
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 roll Aluminum foil (About 12 inches long for each packet.)

Instructions

  1. Begin by washing and dicing your potatoes, bell pepper, onion, and carrots.
  2. In a large bowl, combine the diced potatoes, bell pepper, onion, and sliced carrots. Drizzle them with olive oil, and sprinkle in salt and pepper. Toss until well coated.
  3. Tear off a large piece of aluminum foil (about 12 inches long). Place a generous portion of the veggie mixture in the center of the foil and fold the edges to create a sealed packet.
  4. If grilling, cook on medium heat for 20-25 minutes.
  5. If using an oven, preheat to 400°F (200°C) and place the packets directly on the oven rack or a baking sheet, cooking for the same time.
  6. Carefully open the foil packets (watch out for steam!) and serve hot. Add your favorite toppings and enjoy!
