- 1 lb (450 g) ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 cup zucchini, diced (optional for extra veggies)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup black beans, drained and rinsed (optional)
- 1 cup shredded cheddar cheese
- 1/2 cup low-fat milk
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish with olive oil.
- Cook the turkey: Heat 1 tbsp olive oil in a skillet over medium heat. Add ground turkey, season with salt, pepper, paprika, and cumin. Cook until browned, about 6–8 minutes.
- Sauté vegetables: In the same skillet, add remaining olive oil, onion, garlic, zucchini, and black beans. Cook for 4–5 minutes until softened.
- Prepare sweet potatoes: Boil diced sweet potatoes in water until tender, about 8–10 minutes. Drain and mash lightly with a fork.
- Assemble casserole: Layer the cooked turkey mixture evenly in the casserole dish. Spread mashed sweet potatoes on top. Sprinkle shredded cheese over the top.
- Bake: Place in the oven and bake for 20–25 minutes, until cheese is melted and slightly golden.
- Garnish and serve: Remove from oven, sprinkle with fresh parsley, and serve warm.
- Tip: Stir slowly when mashing sweet potatoes to keep a slightly chunky texture—it adds a nice bite.

- Swap cheddar with mozzarella or pepper jack for variation.
