A delicious one-pot meal featuring smoked beef sausage and seasoned rice.
Ingredients

- 1 lb smoked beef sausage (e ., beef kielbasa or beef andouille), sliced
- 1 cup long-grain white rice, rinsed
- 1 medium yellow onion, chopped
- 1 cup bell peppers, diced (any color)
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tsp paprika
- 2 tsp Cajun seasoning
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish, optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the sliced sausage and cook until browned.
- Add the chopped onion, diced bell peppers, and minced garlic; sauté until soft.
- Stir in the rinsed rice, chicken broth, paprika, and Cajun seasoning.
- Bring to a boil, then reduce heat and simmer until the rice is cooked and liquid is absorbed.
- Remove from heat and let sit for a few minutes.
- Fluff the rice with a fork, garnish with fresh parsley, and serve.
