Description

A delicious one-pot meal featuring smoked beef sausage and seasoned rice.


Ingredients

  • 1 lb smoked beef sausage (e ., beef kielbasa or beef andouille), sliced
  • 1 cup long-grain white rice, rinsed
  • 1 medium yellow onion, chopped
  • 1 cup bell peppers, diced (any color)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp paprika
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the sliced sausage and cook until browned.
  3. Add the chopped onion, diced bell peppers, and minced garlic; sauté until soft.
  4. Stir in the rinsed rice, chicken broth, paprika, and Cajun seasoning.
  5. Bring to a boil, then reduce heat and simmer until the rice is cooked and liquid is absorbed.
  6. Remove from heat and let sit for a few minutes.
  7. Fluff the rice with a fork, garnish with fresh parsley, and serve.
