Description

A delicious creamy pasta dish with mushrooms and spinach, perfect for any occasion.


Ingredients

Scale
  • 2¼ cups half-and-half (can substitute with full-fat coconut milk)
  • 1 cup freshly grated Parmesan cheese (Pecorino Romano can be used for a saltier bite)
  • 6 cloves garlic, minced (customize quantity based on taste)
  • 2 tablespoons extra-virgin olive oil (or avocado oil for a different flavor)

  • 1 pound cremini mushrooms, cleaned and sliced (button mushrooms can be used if cremini is unavailable)
  • 8 oz spinach (kale or Swiss chard can be substituted)
  • 2 tablespoons flat-leaf parsley, chopped (basil can be used for a different flavor)
  • 1 pound pasta (choose your favorite type)

Instructions

  1. Bring a large pot of salted water to a rolling boil, then add pasta and cook until just under al dente, about 8-10 minutes. Drain pasta and reserve ½ cup of cooking water.
  2. In a large skillet, heat olive oil over medium heat until shimmering, then add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in sliced mushrooms, season with salt and pepper, and sauté for about 8 minutes until golden brown and tender.
  4. Fold in the fresh spinach and cook for 2-3 minutes until wilted.
  5. Pour in the half-and-half and bring to a gentle boil, then reduce heat and simmer for 4 minutes until sauce thickens.
  6. Mix in the drained pasta, add Parmesan cheese and chopped parsley, and stir until well combined.
  7. Adjust the sauce consistency with reserved pasta water if necessary, and season with additional salt and pepper to taste.
  8. Serve immediately, garnished with extra Parmesan cheese if desired.
