Description

A delicious and creamy chicken dish with garlic and mushrooms, perfect for serving over rice or pasta.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz fresh mushrooms (button or cremini), sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the mushrooms and mincing the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear until golden brown on both sides (about 5 minutes per side). Remove from skillet.
  3. In the same skillet, add garlic and mushrooms; sauté until fragrant and soft (about 5 minutes).
  4. Pour in chicken broth and heavy cream; stir well while scraping the bottom of the pan. Let simmer for about three minutes until slightly thickened.
  5. Return chicken to the skillet, sprinkle with thyme, cover, and reduce heat to low. Simmer until chicken reaches an internal temperature of at least 165°F (75°C), about ten more minutes.
  6. Serve immediately over rice or pasta with extra sauce drizzled on top.
