Chicken Noodle Soup

Description

A comforting chicken noodle soup loaded with vegetables and creamy goodness.


Ingredients

Scale
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Butter
  • ½ onion (diced)
  • 2 celery stalks (chopped)
  • 2 whole carrots (peeled and chopped)
  • 2 Cloves Garlic (minced or 2 teaspoons minced garlic)
  • ¼ cup All Purpose Flour
  • 8 cups chicken broth
  • 3 boneless skinless chicken breasts (roughly 1 pound)
  • 2 Bay Leaves
  • ¼ teaspoon dried thyme leaves
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 3 cups Egg noodles
  • 1 cup Heavy Cream
  • 1 Tablespoon Chopped Parsley (optional for topping)

Instructions

  1. Heat the olive oil and butter in a large stock pot or dutch oven over medium high heat.
  2. Add in the onions, celery and carrots. Sauté over medium high heat for 5-7 minutes until soft.
  3. Stir in the minced garlic and cook for about a minute until you can smell the garlic.
  4. Stir in the flour and cook for another minute.
  5. Pour the chicken broth into the pan. Stir until the flour is completely dissolved.
  6. Mix in the chicken, bay leaves, thyme leaves, salt and pepper.
  7. Bring the mixture to a boil. Cover and reduce the heat to a low simmer.
  8. Cook until the chicken is cooked through (chicken will be completely white when cooked) and reaches an internal temperature of 165 degrees F. This generally takes approximately 20-30 minutes depending on the size and quantity of the chicken breasts that you are cooking.
  9. Remove the chicken, shred and stir it back into the pan.
  10. Bring the mixture back to a boil. Stir in the egg noodles.
  11. Cook over medium-high for about 8-10 minutes until the noodles are tender and cooked through.
  12. Remove the bay leaves and stir in the heavy cream.
  13. Heat for a few minutes until the cream is heated through.
  14. Serve warm and enjoy!

Notes

  • This recipe can be made in advance and stored in the refrigerator for up to 3 days.
  • Leftovers can be frozen for up to 2 months; just be aware that the noodles may become softer upon reheating.
