Description

A creamy and cheesy hash brown casserole that’s perfect for breakfast or a side dish.


Ingredients

  • 30 ounces frozen hash browns
  • 1 small yellow onion (diced)
  • 10 ounces can cream of chicken soup
  • 2 tablespoons butter (melted)
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • 3½ cups shredded cheddar cheese (divided)

Instructions

  1. Preheat the oven to 350°F and grease a 9X13-inch baking pan.
  2. In a large mixing bowl, combine the hash browns, onion, cream of chicken soup, butter, sour cream, mayonnaise, salt, pepper, garlic powder, and 2 cups of shredded cheddar cheese. Mix until the hash browns are thoroughly coated, and everything looks homogenous.
  3. Spread the hash brown mixture into the baking pan and sprinkle with the remaining cheese.
  4. Bake uncovered for 60 to 70 minutes or until hot and bubbly, and the cheese is a nice golden brown. Let cool for 10 minutes before serving.

Notes

  • This casserole can be prepared a day in advance and baked before serving.
  • Changing the type of cheese can give a different flavor—try gouda or pepper jack!
