A creamy and cheesy hash brown casserole that’s perfect for breakfast or a side dish.

- 30 ounces frozen hash browns
- 1 small yellow onion (diced)
- 10 ounces can cream of chicken soup
- 2 tablespoons butter (melted)
- ½ cup sour cream
- ½ cup mayonnaise
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon garlic powder
- 3½ cups shredded cheddar cheese (divided)
Instructions
- Preheat the oven to 350°F and grease a 9X13-inch baking pan.
- In a large mixing bowl, combine the hash browns, onion, cream of chicken soup, butter, sour cream, mayonnaise, salt, pepper, garlic powder, and 2 cups of shredded cheddar cheese. Mix until the hash browns are thoroughly coated, and everything looks homogenous.
- Spread the hash brown mixture into the baking pan and sprinkle with the remaining cheese.
- Bake uncovered for 60 to 70 minutes or until hot and bubbly, and the cheese is a nice golden brown. Let cool for 10 minutes before serving.
Notes
- This casserole can be prepared a day in advance and baked before serving.
- Changing the type of cheese can give a different flavor—try gouda or pepper jack!
