Description

A hearty and flavorful beef and cabbage dish, perfect for a comforting meal.


Ingredients

Scale
  • 2 Tablespoons olive oil (divided)
  • 1 pound lean ground beef
  • 1 small yellow onion (diced)
  • 3/4 cup diced carrots
  • 1 Tablespoon minced garlic
  • 3 cups chopped cabbage
  • 1 15-ounce can tomato sauce
  • 1 15-ounce can diced tomatoes
  • 4 cups beef broth
  • 1/3 cup greek yogurt
  • 2/3 cup jasmine rice (uncooked)
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Add one tablespoon of the olive oil to a large pan or dutch oven and heat over medium heat.
  2. Add in the ground beef and sauté until cooked through.
  3. Transfer the cooked ground beef to a bowl and set aside.
  4. To the same pot, add the diced onion and carrots and sauté for about 5-7 minutes, stirring occasionally.
  5. Add in the garlic and cabbage and sauté until the cabbage has started to wilt.
  6. Add in all remaining ingredients including the cooked beef and stir well to combine.
  7. Simmer over low heat, covered, until the rice is tender (about 10-15 minutes), stirring occasionally.
  8. Taste and adjust flavors as desired. Enjoy!

  • This dish can be customized with your favorite vegetables.
  • For a spicier kick, add more red pepper flakes.
