Delicious homemade bagels that are boiled and baked for the perfect chewy texture.
Ingredients

- 1 ¼ cups warm water
- 2 teaspoons active dry yeast
- 1 tablespoon sugar
- 1 tablespoon barley malt syrup (or honey)
- 1 ½ teaspoons salt
- 4 cups bread flour (or high-gluten flour)
- 1 tablespoon baking soda (for boiling water)
- to taste toppings of choice (everything seasoning, sesame, poppy seeds, etc.)
Instructions
- In a large bowl, mix warm water and yeast. Let sit for 5 minutes until foamy.
- Stir in sugar, salt, and barley malt syrup. Gradually add flour, stirring to form a rough dough.
- Knead dough on a floured surface for 10 minutes until smooth and elastic.
- Transfer to a lightly oiled bowl, cover, and let rise 1 to 1 hours until doubled.
- Punch down and divide into 8 equal pieces. Shape each into a ball, then poke a hole in the center and stretch into a bagel shape.
- Place on a parchment-lined tray, cover, and let rise 20–30 minutes.
- Preheat oven to 425°F (220°C). Bring a pot of water to a boil and add baking soda.
- Boil bagels 1 minute per side in batches. Remove and place back on tray.
- While still damp, sprinkle with desired toppings.
- Bake for 20–22 minutes until deep golden brown. Cool before serving.
Notes
- Check that the yeast is active by ensuring it becomes foamy after mixing with warm water.
- Feel free to customize toppings according to personal preference.
