Ingredients

- 3 ears sweet corn, shucked
- 3 tablespoons fresh lime juice
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon distilled white vinegar
- 2 teaspoons honey, or sugar
- 1 ½ teaspoons ground coriander
- 1 teaspoon kosher salt
- 1 medium head green cabbage, shredded (about 10 cups)
- 1 cup thinly sliced red onion
- ¾ cup chopped cilantro
- 1 jalapeño, minced
Instructions
- Preheat grill, grill pan, or cast-iron skillet to medium-high heat.
- Grill corn, covered, until charred, about 10 minutes.
- Transfer corn to a cutting board and season with additional salt and pepper to taste.
Notes
- You can adjust the lime juice and honey to taste for a more tangy or sweet salad.
- Feel free to add other vegetables such as tomatoes or bell peppers.
