- 2 tbsp Olive oil
- 1 cup Long-grain rice
- 2 cups Chicken broth (low-sodium)
- 1 medium Onion (finely chopped)
- 1 cup Bell peppers (mixed red and green)
- 2 cloves Garlic (minced)
- 2 tbsp Green onions (sliced)
Instructions
- Sauté the aromatics in a large skillet over medium heat. Add diced onions, bell peppers, and celery, cooking until they soften and release their delightful fragrance, about 5 minutes.
- Season the shrimp with Cajun spices. In a bowl, toss your shrimp with a generous sprinkle of Cajun seasoning until evenly coated.
- Cook the shrimp until they’re pink and opaque. Add the seasoned shrimp to the skillet and sauté for 3-4 minutes, stirring occasionally.
- Combine with rice and broth. Stir in cooked rice and chicken broth, bringing everything to a gentle simmer. Let it bubble away for about 10 minutes.
- Finish with fresh herbs for brightness. Just before serving, stir in chopped parsley or green onions.
